Blanc de Noir 2010 sparkling wine, extra brut
Cremagne Blanc de Noir is made using the classic method of bottle fermentation with over a decade of maturation on lees at a constant temperature and without exposure to daylight.
The mature bouquet of cereals, accompanied by candied fruit, reveals structured autolytic tones with an original expression of preserved quince and an impressive animal character from the dry maturation “forest high“ which refers to the fact that the aging period occurred in a dark and calm environment, typically in a cellar or basement where a constant temperature was maintained.
On the palate, this sparkling wine is very full-bodied, extractive, and exhibits a mineral quality reminiscent of sea fruits.
