Vinum Palaviense
Limited harvest of original quality wines with a controlled origin at the foot of limestone cliffs in the Pálava biosphere reserve. The influence and character of the local climatic and soil conditions – terroir – combined with the method of natural fermentation allow to make an excellent range of wines.
The wines have a controlled origin from vineyards in Perná and its surroundings. Based on the variability of local conditions, original wines can emerge even from small vineyard plots within the cadastral area. Grapes are cultivated using integrated production methods and consistently achieve the highest quality. The advantages of the terroir are further enhanced by processing through controlled fermentation methods complemented by additional modern technological procedures. Harvesting is limited, and red wines remain unfiltered.
Pinot Noir 2011 selection from grapes, unfiltered
The grapes originate from a vineyard with reduced harvest. They are processed using controlled fermentation technology, followed by maturation in 2-4-year-old French oak barrels. The bouquet of overripe grapes, dried figs, early forest fruit, and black raisins in chocolate make a contribution to the robust, full flavor reminiscent of Pardubice gingerbread, with a long harmoniously structured finish.
