Ch. Dowina
These wines are, among other things, matured using the technique of bâtonnage (from French bâtonnage), which involves the temporary stirring of wine with lees containing still-active yeast. The maturation process occurs in French oak barrels of the barrique type.
To emphasize the winemaking tradition that dates back to the times of the Great Moravia, the name Château Dowina was derived from the original name of the hillfort Dívčí Hrady in Pavlov. Thanks to its unique processing methods, the wine acquires an extraordinary character, original aromatic tones, rich structure, and fullness in flavor.
