Premier wines of the highest quality are exclusively made from perfectly ripened grapes that remain on the vines for 30 to 60 days or more even after the end of the growing season. This, combined with the unfiltered nature of the wine, creates an unparalleled experience.
The deliberate skin contact during winemaking is a significant factor not only in the wine’s intrinsic value (extract, antioxidants, etc.) but also in expressing its origin, its „birthplace“, its terroir. The targeted use of yeast, the “mother” of wine technology, involves sensitive handling of SO₂ and long-term nearly year-long aging on lees. These wines are naturally refined without clarifying agents and bottled without filtration.
