VOC Pálava
The designation “VOC PÁLAVA” can only be awarded to wines made from the Welsch-Riesling variety which is characterized by its unique origin and irreplaceable originality in the Pálava region. These wines must be produced solely from grapes grown in registered vineyards within the area defined by sections of land among the municipalities of Perná, Horní Věstonice, Dolní Věstonice, Pavlov, Klentnice, Mikulov, and Bavory.
Grapes must be healthy, and berries with noble mold are welcome. Only manual harvesting is allowed. The wine should be formed by the vineyard (terroir) to a greater extent, with a maximum yield of 5000 liters per hectare from the vineyard where the grapes were harvested. Wines must mature on lees for a minimum of 60 days after the end of fermentation or 90 days after the harvest. The use of barrels for wine aging is permitted, but only to an extent that it does not overshadow the expression of terroir and the grape variety.

The bouquet of overripe greengages, preserved apricots, and botrytized raisins is complemented by freshly dried Pálava herbs. The wine taste is opulent, distinctly spicy, with a layered honey finish.
